Turkey or Chicken Stock

Ingredients

  • bones from roast turkey or chicken
  • water
  • 2 carrots or parsnips, cut into 3 pieces each
  • black peppercorns
  • 1 onion, quartered
  • Parsley sprigs

Instructions

1. place bones, skin and any drippings from turkey or chicken in a stock pot. Add water to cover. Add remianing ingredients. Bring to a boil, reduce heat and simmer 2-8 hours. Strain, discarding bones and veggies. Place stock in jars, leaving an inch head space. Place in freezer or use in soup, stew, chili or any recipe that calls for chicken broth.
