Strawberry Almond Crumble Bars

This recipe is our rendition of the Raspberry Bars from Tates Bake Shop in New York. A buttery streusel is made and pressed into a 9×13-inch dish, then topped with our Easy Strawberry Preserves,  then sprinkled with the remaining streusel. If you like shortbread, you’ll love these buttery bars. 

    Ingredients

    • 2 sticksbutter
    • 1 cupsugar
    • 1egg yolk
    • 3 cupsflour
    • pinchsalt
    • 1 1/2 cupschopped almonds
    • 1 cupfig or strawberry preserves (or a combination of your favorite)

    1. Preheat oven to 350F.

    2. Combine butter and sugar in the bowl of a mixer. Beat until light and fluffy, about 4 minutes. Add egg yok, and blend well. Add flour and almonds and mix well. Press 2/3 butter mixture in a 9 x 13-inch dish. Bake 20 minutes. Remove from oven. Spread with jam, and spinkle with remaining butter rmixture. Bake 35 minutes. Cool and cut into 24 bars.
