Rosemary Shrimp Scampi Skewers

Serve these shrimp skewers plain or with your favorite pesto

    Ingredients

    • 1 tablespoon dry white wine
    • 1 teaspoon fresh lemon juice
    • 1 teaspoon olive oil
    • 1/8 teaspoon salt
    • 1/8 teaspoon freshly ground black pepper
    • 2 garlic cloves crushed
    • 18 large shrimp, peeled and deveined
    • 6 6-inch rosemary sprigs
    • Lemon wedges (optional)

    1. Combine first 6 ingredients in a medium bowl. Add shrimp and mix to coat. Marinate in refrigerator 30 minutes. Thread 3 shrimp onto each rosemary sprig to make 6 skewers. Arrange skewers on a pre heated grill or grill pan. Cook for about 2 minutes each side. Remove from grill and serve immediately with lemon wedges.
