- 3 red beets
- 3 yellow beets
- 3 yams or sweet potatoes
- 1 1/2 tablespoons extra virgin olive oil
- salt and pepper to taste
Preparation
- Preheat the oven to 400°F
- Peel beets and dice into 1-inch cubes; toss into roasting pan
- Dice sweet potatoes (skin on) into 1-inch cubes and toss into same pan
- Drizzle olive oil over beets and sweet potatoes and toss to coat
- Sprinkle with salt and pepper, toss again, and roast for 40 minutes or until sweet potatoes are golden and you can easily pierce beets with fork.
