Fresh peaches (skin and all) mingle with vanilla seeds, lemon and sugar for jammy rich peach preserves.Keep in the fridge.  No pectin or canning required.

Ingredients

  • 6 -8 cups chopped fresh peaches
  • 1/2 lemon, juiced
  • 1 1/4 cups sugar
  • 1/3 vanilla bean, split, seeds removed
  • pinch salt

Preparation

1. Combine peaches, sugar, lemon and vanilla seeds and pod. Bring to a boil, reduce heat and simmer about 2 hours or until thick and reduced down. Cool, then place in jars. Refrigerate. Will last up to 3 weeks in the fridge. Use on toast, ice cream, with crackers or cheese.
