Ingredients
SERVINGS: 22-24 Cookies
- 2 sticks (1 cup) butter
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg (optional)
- 2 1/2 cups old-fashioned oats
- 1/2 cup raisins or walnuts (optional)
Preparation
1. Preheat the oven to 350F. Beat together butter, sugars and vanilla, until smooth. Add egg, beating until smooth.
2. Add cinnamon, salt, nutmeg, baking soda, and flour, beating until well incorporated. Add oats and raisins, if using, stirring to combine.
3. Drop dough in 1 1/4" balls onto prepared baking sheets; a tablespoon cookie scoop works well here. If you're measuring, use about 2 level tablespoons (using a tablespoon measure, not a dinner spoon). Space cookies 2" apart, as they'll spread.
4. Bake cookies 12 - 14 minutes. Remove from oven and let cool right on the pan.
