Maple Roasted Butternut Squash

    Ingredients

    • 3 small butternut squash, halved vertically

    Preparation

    1. Preheat oven to 375F.

    2. Cut butternut squash in half vertically. Place cut-side up in a roasting pan. Place a small amount of water in the pan. . Roast for 30  minutes or until tender and browned. Drizzle with maple syrup (or sorghum) and olive oil. Sprinkle with salt. Roast an additional 15 minutes or until tender.
