MacHenry's Meatloaf with Bourbon BBQ Sauce

This meaty, savory meatloaf from MacHenry’s Meat & Three on Murfreesboro Pike is served with a dynamite BBQ sauce. And of course, it’s best sliced cold on a sandwich the next day. 

    Ingredients

    • 1tablespoon olive oil
    • 1cup minced onion
    • 1/4cup minced garlic
    • 3/4cup bourbon, plus extra for sipping – Machenry’s likes Four Roses
    • 2cups ketchup
    • 1/4cup Worcestershire sauce
    • 3teaspoons molasses
    • pinchsalt and pepper
    • 1/2cup brown sugar
    • 1teaspoon tobasco
    • 1teaspoon liquid smoke
    • pincheach garlic powder, onion powder, and smoked paprika
    • 1pound ground beef
    • 2eggs
    • 3/4cup Panko breadcrumbs
    • 2tablespoons bourbon BBQ sauce
    • 1tablespoon Worcestershire sauce
    • 1tablespoon garlic powder
    • 1/4cup finely chopped onion
    • 1/4cup finely chopped red bell pepper
    • pinchsalt and pepper

    1.  To prepare BBQ sauce, heat oil over medium high heat in medium saucepan. Add onion and sauté 10 minutes. Add garlic and sauté 5 minutes more. Add bourbon and let reduce by half, about 10 minutes.

    2.  Reduce heat to medium, add remaining ingredients, and simmer 15 minutes, stirring occasionally. Place in jars and refrigerate.

    3.  To prepare meatloaf, preheat oven to 375F. Combine all ingredients in large bowl and mix by hand. 

    4.  Press meatloaf mixture evenly in 9×4-inch loaf pan. Cover with foil and bake 45 minutes to 1 hour or until internal temperature reaches 165F. (Top with bourbon BBQ sauce for last 10 minutes of baking.) 

    5.  Slice meatloaf and serve with extra bourbon BBQ sauce.
