Late summer finds from the farmers market converge in this refreshing cold soup: juicy heirloom tomatoes, sweet watermelon, red bell pepper, and cucumber.

Ingredients

  • 4-5 large juicy heirloom tomatoes, cored
  • 2 cups seedless watermelon chunks
  • 1/2 large cucumber, peeled
  • 1/2 red bell or banana pepper
  • 1/2 small red onion, cut in half
  • 1/2 small jalapeno, seeds removed (optional)
  • 2 tablespoons sherry vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 cup extra virgin olive oil

Preparation

1. Combine the ingredients except the vinegar and oil in a blender. Blend until smooth. Add vinegar, salt and oil and blend again. Makes 8 cups.
