Ingredients
SERVINGS: 10-12 Cocktail
strawberry syrup
- 2 pounds strawberries, sliced
- 4 cups water
- 2 cups sugar
Cocktail
- 7 ounces rum
- 7 ounces Aperol
- 7 ounces strawberry syrup
- 7 ounces lime juice
- 7 ounces pineapple juice
Preparation
1. To prepare strawberry syrup, place strawberries in pot over medium heat. Cover with water and bring to boil. Reduce to simmer and cook 20 minutes. If foam rises to top, skim off.
2. Strain strawberry liquid through mesh strainer into another pot. Do not press down on solids. Discard solids.
3. Add sugar and bring back to boil, stirring frequently to dissolve sugar. Let simmer 5 minutes or until sugar is completely dissolved. Cool completely.
4. To prepare cocktail, fill a one gallon container with ice.
5. Combine all ingredients in a pitcher and stir. Pour over the ice in container.
6. Garnish with sliced fruit, berries, and pineapple fronds.
