Garlic Herb Marinated Chicken Tenders

This recipe is perfect for taking camping or to a cabin. The chicken marinates with olive oil, garlic, and herbs, and travels great in a plastic tub (the reuseable kind from take out) or a plastic zip-top bag. Then when ready to fire up the grill of campfire, give them a quick saute. It’s super versatile and almost any herb will work.

This is my go-to recipe for camping, or road trips where you need a quick meal after a long day. The chicken soaks up the herbs and garlic as you’re traveling and are super flavorful by the time you sauté them up. Pop them in a leftover take-out container, which is far superior to a plastic bag. Perfect atop a kale salad or on their own with roasted sweet potatoes and asparagus.

    Ingredients

    • 2 pounds boneless chicken breasts (or thighs)
    • 4 large cloves garlic, chopped (green garlic works well too)
    • 1/4 cup each chopped fresh parsley, chives, mint, and basil
    • 1/4 cup olive oil
    • Juice of 1 lemon
    • salt and pepper

    1. Cut chicken insto strips or bite-size pieces. The smaller you cut the chicken the better the marinade with penetrate the meat. Combine herbs, garlic, chives, olive oil, slat and pepper. Toss throughly with chicken. Pack in a plastic reuseable tub or a zip-top plastic bag. Chill for up to 24 hours. Remove chicken from marinade and saute until done.
