Ingredients
- 8 cups chopped garden lettuces
- 1/2 large watermelon radish, sliced thin
- 2 medium red radishes, sliced thin
- 1 medium purple carrot, sliced thin on a bias
- 1 small spring onion, white parts sliced into thin rings
- 1/3 cup sliced almonds, for garnish
- 1/3 cup crumbled vegan feta cheese, for garnish (substitute sheep's milk feta or chèvre if you can tolerate dairy)
- Galena Garlic Blueberry Balsamic
- Galena Garlic Tuscan Herb Olive Oil
- sea salt and black pepper, to taste
Instructions
Divide all ingredients amongst 4 plates. Drizzle each with blueberry balsamic and olive oil to taste, sprinkle with salt and pepper and serve.
