Cream of Spinach Soup

Fresh spinach stars in this simple soup that is a perfect start to the holiday meal.

Ingredients

  • 2 tablespoons oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 3 ounces ham, chopped
  • 2 tablespoons flour
  • 2 cups water
  • 2 pounds fresh spinach
  • 2 cups milk
  • 3 ounces Romano cheese, grated
  • 1 cup half-and-half
  • salt and pepper

Preparation

1. Heat oil in a large saucepan. Add onion, garlic and ham, saute 5-10 minutes or until starting to brown. Add flour and stir well and cook 5 minutes. Add 2 cups water and spinach. Cook 10 minutes or until spinach wilts down. Add 2 cups milk and Romano Cheese. Cook 10 minutes on low.

2. With an immersion blender, blend until mixture is creamy, but not totall blended. (Or place mixture in a food porcessor and pulse until cremy.)  Add cream and heat through. Serve with croutons.
