Corn chips, salsa and eggs come together in this quick and satisfying breakfast dish, perfect for brunch for a gang.

Ingredients

  • 1 cup salsa (such as Dave's)
  • 1/4 cup chicken stock
  • 2 ounces tortilla chips (such as Santo Nino chips)
  • 2-4 eggs
  • 1/2-1 avocado, sliced
  • 3 ounces Cotijo cheese, crumbled (or feta)

Instructions

1. Place salsa and chicken stock in a skillet. Cook 3 minutes. Add chips and heat through. Remove and place in bowls. Cook eggs in skillet over medium. Place on top of salsa chip mixture. Top each with sliced avocado, Cotija cheese and cilantro.
