Cheddar Quesadillas with Fresh Corn and Peach Salsa
Use whatever cheese you have on hand and leftover fresh corn. Simple fresh peach salsa makes a great partner for the quesadillas.
Ingredients
4 8-inch corn tortillas
4 ounces grated cheddar or mozzarella cheese
1 cup fresh cooked corn
Peach Salsa
2 large ripe peaches, chopped
1/4 cup fresh chopped cilantro
2 tablespoons chopped red onion
1 tablespoons lime juice

To prepare salsa, combine peaches, red ojnin, cilantro and lime juice. Mix.
Place corn or flour tortillas in skillet with a tad of olive oil. Top with grated cheese and fresh corn kernels. Top with tortillas. Cook until browned, flip cook remaining side until browned and cheese is melted. Serve with Peach Salsa
