Brown Sugar Pear Preserves

With a windfall of pears from forgotten trees in downtown Nashville, we cooked up rich, brown pear preserves.

Ingredients

  • 20 small to medium pears (any kind)
  • 1 cup turbinado sugar (or brown sugar)
  • Juice of 1/2 lemon
  • 1/2 teaspoon cinnamon

Instructions

1. Core and chop pears. No need to peel. Place in a large saucepan. Add brown sugar and lemon. Place over medium heat and bring to a simmer. Cook for 1 hour. When pears are soft, mash with a hand masher until mixture is chunky. Add cinnamon. Cook another hour, checking frequently until thick and browned. remove from heat. Cool. Place in jars in the refrigerator. yeild about 3 cups preserves.
