Black Bean Salad with Cumin Vinaigrette

    Ingredients

    • 4-5 cupscooked black beans
    • 3/4 cupfresh corn, cut from cob
    • 1red bell pepper, diced
    • 20cherry tomatoes, halved
    • 1/2 red oniondiced
    • 1/2 jalapeno pepperseeded and diced
    • 1/2 cupchopped fresh cilantro
    • 1/4 cupextra virgin olive oil
    • 2 tablespoons eachlime juice and wine vinegar
    • 1/2 teaspoon eachcumin and chili powder
    • 1/2 teaspoonkosher or coarse salt

    1. In a large serving bowl, combine beans through cilantro, toss to combine. Whisk together oil and next 5 ingredients. Add to bean mixture and toss gently. Taste, and adjust seasoning as necessary. 
    2. Cover and chill. Serves 10.
