Ingredients
- 3-4 generous handfuls basil
- 1 teaspoon salt
- 2-3 tablespoons fresh lemon juice
- 4 cloves garlic
- 1 1/2 cups parmesan cheese
- 1-1 1/2 cups olive oil
- 2 cups toasted pistachios
Preparation
1. Place basil, salt, lemon juice, and garlic in the bowl of a food processor; pulse until pureed. Let sit for 5-10 minutes to temper the garlic.
2. Add cheese and oil, pulse to integrate ingredients while retaining some texture. Add nuts and pulse several times until the pistachios are chopped but not pulverized.
