Bake a chicken breast with onion, garlic, salt, pepper, paprika, oregano and a squeeze of lemon. Let cool. Combine chopped raw kale, handful of cherry tomatoes, diced cucumber and feta cheese. Add chicken, a good drizzle of olive oil and salt and pepper. As it sits, the feta and olive oil mingle with the vegetables to make a sort of dressing, and the kale gets more tender.
