Maple Butter
- 1/2 pound (2 sticks) softened butter
- 2 tablespoons maple syrup
- pinch salt
- pinch cinnamon
Waffles
- 4 eggs separated
- 2 cups flour
- 1/2 cup cornmeal
- 2 tablespoons baking powder
- 1/2 tablespoon baking soda
- 1/2 tablespoon kosher salt
- 1/4 cup granulated sugar
- 2 cups buttermilk
- 2 tablespoons olive oil
- 1 tablespoon vanilla extract
Waffle Fillings
- 2 cups chopped crispy bacon
Waffle Filling
- 2 cups shredded cheddar cheese
- 1 cup sliced scallions
Preparation
To prepare Maple Butter, mix all ingredients together until fully combined. Keep cool or at room temp.
To prepare waffles, separate egg whites and yolks into separate bowls. Combine flour, cornmeal, baking powder, baking soda, and salt. Set aside. Beat egg whites and sugar until stiff peaks. Combine buttermilk, olive oil, egg yolks and vanilla. Add the flour mixture to the buttermilk mixture.Gently fold in whipped egg whites.
Cooking
Spray waffle iron with cooking spray. Ladle batter into iron. Add waffle fillings as desired. Allow waffle to cook until golden brown and crispy.
Serve with Maple Butter.
