Bacon Cheddar Waffles

The key for the waffles is to separate the eggs to obtain a crispy and light texture.

    Ingredients

    • 1/2 pound (2 sticks)softened butter
    • 2 tablespoonsmaple syrup
    • pinch salt
    • pinch cinnamon
    • 4eggs separated
    • 2 cupsflour
    • 1/2 cupcornmeal
    • 2 tablespoonsbaking powder
    • 1/2 tablespoonbaking soda
    • 1/2 tablespoonkosher salt
    • 1/4 cupgranulated sugar
    • 2 cupsbuttermilk
    • 2 tablespoonsolive oil
    • 1 tablespoonvanilla extract
    • 2 cupschopped crispy bacon
    • 2 cupsshredded cheddar cheese
    • 1 cupsliced scallions

    Preparation

    Spray waffle iron with cooking spray. Ladle batter into iron. Add waffle fillings as desired. Allow waffle to cook until golden brown and crispy.

    Serve with Maple Butter.

    To prepare Maple Butter, mix all ingredients together until fully combined. Keep cool or at room temp.  

    To prepare waffles, separate egg whites and yolks into separate bowls. Combine flour, cornmeal, baking powder, baking soda, and salt. Set aside. Beat egg whites and sugar until stiff peaks. Combine buttermilk, olive oil, egg yolks and vanilla. Add the flour mixture to the buttermilk mixture.Gently fold in whipped egg whites.
