Aaron Raitiere's Effin' Good Bread

Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 package yeast
  • 2 cups warm water
  • 3 cups flour

Preparation

1.  Combine sugar, salt, and yeast. Add water and let foam (indicating the yeast is alive).  Add flour and mix well. Place in a bowl, cover, and let sit at room temperature to rise for 3-6 hours and up to 2 days (at that point, you might find it exploding out of the container).  Punch down and shape into baguettes or place in refrigerator for up to 2 weeks.

2.  Bake at 400F for 25-30 minutes. Makes 3 loaves.
