5 Great Recipes using Beets
Before beets became the darling of the farmers market, they weren't very highly regarded. I grew up only knowing beets from the can called Harvard Beets for some reason. No one really admitted to liking them. Now beets are displayed gloriously at the markets with regal greens attached. We love beets for their earthy flavor, and also their nutrient content. They're high in vitamin C, folate, copper, maganesium and fiber. And of course they're fat free. Toss them in foil, roast them at 400F until tender and their thin skins will rub right off. Then toss them in your favorite salad or in any of the recipes below. --Jill Melton
