Strawberry Lavender Syrup

This bright, floral syrup is a perfect topping for pancakes, waffles, French toast, or ice cream, or stir it into your favorite drink as a flavored simple syrup. Recipe by Whitney Reist of Sweet Cayenne.

    Ingredients

    • 1 1/2pounds strawberries, rinsed and hulled
    • 1/2cup water
    • 3/4cup sugar
    • 1/4cup honey
    • 1lavender tea bag
    • 2tablespoons fresh lemon juice, strained

    1.  Put strawberries in medium, heavy-bottomed saucepan and bring to a boil over medium heat, stirring often. Reduce heat to low and simmer, stirring occasionally, until fruit has broken down into small pieces, about 15 minutes.

    2.  Using fine mesh strainer, gently strain juice from strawberry pulp (save the pulp for smoothies!) and return juice to pan. Add remaining ingredients and boil, stirring occasionally, for about 20 minutes, until mixture is syrupy and has reduced by about 1/3. It should coat the back of a spoon.
