Simple Roast Salmon Dinner

This recipe comes to us from Lee Ann Merrick of Tinwings in The Nations.

    Ingredients

    • 13-pound side of salmon, skinned or salmon filets
    • 1-2tablespoons lemon pepper seasoning, or seasoning of your choice
    • 1/2cup sour cream
    • 1/2cup yogurt
    • 2tablespoons fresh lemon juice
    • 2tablespoons capers
    • 2tablespoons chopped fresh dill, dried is okay too
    • salt and pepper to taste
    • lemon pepper seasoning to taste

    1.  Preheat oven to 400F. Line sheet pan with foil. Place salmon on foil and sprinkle with seasoning. 

    2.  Roast 18-25 minutes. To add more color to your salmon, turn on your broiler for the last few minutes. Serve hot, room temperature, or cold with caper dill sauce. 

    3.  To prepare caper dill sauce, combine all ingredients, stirring well.
