2 pounds baby spring radishes
2 tablespoon sextra-virgin olive oil
salt and pepper

1. Preheat oven to 400F. Combine olive oil and radishes in a roasting pan. Sprinkle with salt and pepper. Roast for 30-40 minutes or until radishes are tender. Serve with olives, biscuits and sweet potato jam.
