Pinewood Social Granola

We love the funky, relaxed vibe of the Pinewood Social. It's perfect for working and for meetings. As a result we spend many a morning in "booth #5" drinking cups of Crema coffee and meeting with Music City's creatives. The granola is perfect–a crunchy, nutty mix with creamy yogurt and fresh berries. They were good enough to share the recipe with us.

    Ingredients

    • 1 1/2 cupsrolled oats
    • 3/4 cuppumpkin seeds
    • 3/4 cupsunflower seeds
    • 1/2 cupsesame seeds
    • 1/2 cupcoconut chips
    • 1/2 cupsliced almonds
    • 3/4 cupmaple syrup
    • 1/2 cupextra virgin olive oil
    • 1/2 cuplight brown sugar
    • 1 1/2 teaspoonssea salt
    • 1 cupdried cherries

    1.     Preheat the oven to 325 degrees.

    2.     In a large bowl, combine all ingredients, except dried cherries, and spread out on a sheet pan in a single layer. Bake for 30 minutes, stirring periodically.  While baking, roughly chop the dried cherries and set aside. Remove granola and allow to cool. Add cherries.
