Elaine likes to mix ground sausage with the ground lamb for flavor and ease.
Ingredients
1 pound ground lamb (Belfair Farms)
1/2 pound ground lamb sausage (Belfair Farms)
4 ounces feta cheese, crumbled
1/4 cup chopped fresh mint or rosemary
1/2 cup chopped green onion
2 cloves garlic, minced
salt and pepper
Arugula, feta, onions

1. Combine all ingredients. Mix gently with hands. Shape into 6 patties. Grill or cook in a skillet until desired degree of doneness. Top with extra feta, arugula, onions and tomato.
