Brussels sprouts with White Balsamic Vinaigrette

Chef Star Maye of Anzie Blue fries her Brussels sprouts in 5 cups oil, but we find roasting them better for the home cook. Find this recipe and more in her book, A Star Among Us: A Chef’s Story.

    Ingredients

    • 1pound Brussels sprouts, cleaned
    • 2tablespoons canola oil
    • 1/3cup white balsamic vinegar
    • 1/2cup extra virgin olive oil
    • 2tablespoons honey
    • 1teaspoon Dijon mustard
    • 1/2teaspoon Italian seasoning
    • 1/4teaspoon dried garlic powder
    • salt and pepper, to taste
    • 2tablespoons feta
    • 1tablespoon cooked, chopped bacon

    1.  Preheat oven 400F. Combine Brussels sprouts and canola oil on a roasting pan. Roast 20-25 minutes, or until tender. 

    2.  In large bowl, combine vinegar, olive oil, honey, mustard, Italian seasoning, garlic powder, and salt and pepper. 

    3.  Add Brussels sprouts to prepared vinaigrette and toss. Top with feta and bacon.
