With a pound of elusive ramps from the Richland Park Farmers Market in April, we set out to make ramp butter, risotto and this sprightly slaw, perfect with salmon, pork or shrimp. Ramps have a garlicky flavor, a bit more pungent than green onions or spinach, both of which can be substituted for them.
Ingredients
1/4 head green cabbage, sliced thin
3 ramps, sliced
1 green onion, sliced
2 tablespoons oil
2 tablespoons fish sauce
2 limes, juiced
2 tablespoons Rice Wine Vinegar
1 tablespoon honey or brown sugar
2 tablespoons soy sauce
2 teaspoons cili pepper oil or jalapeños, chopped
Cilantro

Toss all ingredients together in a large bowl. Let sit at least 1 hour. Slaw gets more flavorful as it sits.
