Proper Sake & Dumplings
Byron of Proper Sake wants you to drink sake. He doesn't really care how you drink it. In fact he says one of the best food pairings is Spaghetti and Meatballs. Sake is low in acid so goes well with acidic ingredients such as tomatoes and those high in umami, such as Parmesan cheese and grilled meats.
We recently went to Proper Sake, a humble tasting room housed in an industrial strip center easily missed. When you enter a small door, you're in a tasting room with warm pine booths built by Byron himself. Owner Byron Stithem, brews the sake, beer and house kombucha. And he has recently started serving dumplings on Friday and Saturday. Hearty and stuffed "to the gills" with fillings (hot chicken, pork and xx to name a few), the dumplings are served in savory sauces and embellished with pickle, salsas and peppers.
