Pinky's Micros: Growing Microgreens for Music City
Pinky’s Micros was created by a man seeking to create a work-life balance. Inspired by watching his grandmother tend her garden and make creative dishes, Jacob Pinkston knew he wanted to be a chef. He formally trained and worked for a number of restaurants, including Henley under James Beard Award-winning Chef RJ Cooper. He left cooking in 2019, wanting to pursue a food-related business where he could collaborate with chefs. He started researching different avenues and came across microgreens — Pinky’s was founded in 2021.
You may be asking, “What are microgreens and why should I care about them?” Lots of reasons. They’re a flavor bomb, with all the flavors of the mature vegetable in the tiny leaves and sprouts. They’re also packed with nutrients, including vitamins C, E and K, beta-carotene and antioxidants. And they don’t take much time to grow, as they are harvested very young.
To say Jacob is dedicated to his small business would be an understatement. He does many of his own deliveries (to homes and restaurants) and mans a booth at the farmers market, all while raising a young daughter. He just moved his operation to a space in Bellevue six times the size of his old space and plans to produce more varieties of microgreens, rare herbs and edible flowers. “It's an endless possibility what we can bring to our local community,” he says.
