Bright Spring Rolls for Holiday Parties
I love hosting. I love sharing my home with family and friends, sharing stories, and talking about life. I imagine it comes from my travels. I've spent the majority of my adult life as an expat living abroad (most recently five years in Chile), working in language research and teaching. But after ten years away, I moved back to be closer to my parents.
These spring rolls have become a staple, especially during the holiday season, when I find myself in social gatherings centered around food that is high in calories and low in nutrition. Delicious, none-the-less, but not great for my mind, body, or spirit. Spring rolls are a nutritious, flavorful, and colorful way to combat the stereotype of unhealthy holiday food. I love serving them because they are fresh, delicious, and healthy. Plus, with sweet, savory, and spicy options, the dipping sauces serve every palate. It's rare someone walks away without a sauce they MUST make at home.
These rolls are perfect for parties as they can be made in advance and don’t need to be warmed up. They also lend themselves to potlucks, dinner on the go, and parties where you want the guests to help.
