The effervescent, Dolly Ingram, owner of Bolton's, with their food truck in East Nashville.

If you live in Nashville and haven’t tried Bolton’s Spicy Chicken & Fish, you’re missing out. There may be "louder" hot chicken places in town, but Boltons is the real deal. We were fortunate enough to have their catering truck as one of the stops on our April 2019 Progressive Dinner down Gallatin Pike and we were just as anxious to get our plate as our guests were.

Co-owner Bolton Mathews’s chicken expertise began before people were flocking to the "hot chicken" trend. Mathew’s late uncle was well-versed in hot chicken and became his advisor, passing on his recipe to Bolton before his death. And Bolton’s recipe is a beautiful blend of spice and flavor. As Bolton’s co-owner Dolly says, “our chicken is spicy, but it won’t cause you to lose your composure.”

Perhaps the best thing on Bolton’s menu, however, is yet another Southern favorite – spicy fish. You can order it as a customary fish sandwich or as a plate with the traditional side of spaghetti or choose another “southern style side” like beans, potato salad, or mac & cheese. Fish not your thing? Try their bone-licking wings or ribs.
