Greek Lamb Tacos with Mediterranean Salsa

This new twist on tacos by Chef Skylar Bush is from our Lamb Cooking Class sponsored by The American Lamb Board at Black Diamond Culinary May 2022. 

    Ingredients

    • 2large tomatoes, diced
    • 2cucumbers, seeded and diced
    • 1medium red onion, diced small
    • 1/2cup chopped kalamata olives
    • 1/4cup chopped fresh parsley
    • 2tablespoons chopped fresh mint
    • 2limes, zested and juiced
    • salt to taste
    • 1tablespoon dried basil
    • 1 1/2teaspoons cumin
    • 1tablespoon dried oregano
    • 1 1/2teaspoons fine sea salt
    • 1 1/2teaspoons dried dill
    • 1 1/2teaspoons dried parsley
    • 1 1/2teaspoons onion powder
    • 1teaspoon dried rosemary
    • 1teaspoon ground black pepper
    • 1teaspoon dried thyme
    • 1/4teaspoon ground cinnamon
    • 1pound ground lamb
    • 2garlic cloves, minced

    1.  To prepare salsa, add all ingredients to large bowl and mix until combined. Set aside 1 hour before using.

    2.  To prepare Greek taco seasoning, mix all ingredients together in a bowl and store in mason jar.

    3.  To prepare tacos, saute lamb until browned. Add garlic and seasoning and cook until fragrant. Serve in your favorite taco shells and top with salsa.
