Late Summer Gazpacho

Late summer finds from the farmers market converge in this refreshing cold soup: juicy heirloom tomatoes, sweet watermelon, red bell pepper, and cucumber.

    Ingredients

    • 4-5 largejuicy heirloom tomatoes, cored
    • 2 cupsseedless watermelon chunks
    • 1/2 largecucumber, peeled
    • 1/2red bell or banana pepper
    • 1/2 smallred onion, cut in half
    • 1/2 smalljalapeno, seeds removed (optional)
    • 2 tablespoonssherry vinegar
    • 1/2 teaspoonkosher salt
    • 1/4 cupextra virgin olive oil

    1. Combine the ingredients except the vinegar and oil in a blender. Blend until smooth. Add vinegar, salt and oil and blend again. Makes 8 cups.
