Ole Red's Smokehouse Chili

This simple chili from downtown’s own Ole Red and Chef Garett Pitler brings the flavors of the smokehouse right to your kitchen. 

    Ingredients

    • 2 teaspoonsolive oil
    • 2 teaspoonsbutter
    • 36 ouncestomato paste, diluted with 20 ounces water
    • 8 cupswhite beans, drained
    • 3 to 4medium onions, chopped
    • 2poblano peppers, smoked and chopped
    • 2cloves garlic, minced
    • 1/4 cupbrown sugar
    • 2 tablespoonsmolasses
    • 1 cupchili powder
    • 1 teaspoonground cumin
    • 1 teaspoonoregano
    • 1/2 teaspoonsweet basil
    • 1 ouncehot sauce
    • 1 teaspoonsalt
    • 1 teaspoonpepper
    • 4 poundssmoked pork, brisket, or chicken

    1.  Add olive oil and butter to a pot and cook onions and peppers until translucent.

    2.  Add remaining ingredients and simmer 2 to 3 hours.

    3.  Add meat.
