Skillet Sauteed Okra

Forget messy breading and frying, THIS is the perfect okra--as addictive as popcorn. The little pods get flash sauteed with kosher salt and are cooked enough to give them a browned exterior, a crunch and a tender interior. Get the smallest ones you can find. We love to eat them with our fingers like french fries.

Ingredients

  • 1 tablespoon butter
  • 2 tablespoons vegetable oil
  • 1 pound small okra pods
  • kosher salt

Preparation

1. Heat olive oil and butter in a saute pan until hot. Add small okra pods (stem intact). Saute on medium-high for 2-5 minutes depending on size of pods, until browned and tender. Sprinkle with kosher salt, and serve hot.
