Skillet Sauteed Okra

Forget messy breading and frying, THIS is the perfect okra–as addictive as popcorn. The little pods get flash sauteed with kosher salt and are cooked enough to give them a browned exterior, a crunch and a tender interior. Get the smallest ones you can find. We love to eat them with our fingers like french fries.

    Ingredients

    • 1 tablespoonbutter
    • 2 tablespoonsvegetable oil
    • 1 poundsmall okra pods
    • kosher salt

    1. Heat olive oil and butter in a saute pan until hot. Add small okra pods (stem intact). Saute on medium-high for 2-5 minutes depending on size of pods, until browned and tender. Sprinkle with kosher salt, and serve hot.
