Roasted Beet and Sweet Potato

  1. Preheat the oven to 400°F
  2. Peel beets and dice into 1-inch cubes; toss into roasting pan
  3. Dice sweet potatoes (skin on) into 1-inch cubes and toss into same pan
  4. Drizzle olive oil over beets and sweet potatoes and toss to coat
  5. Sprinkle with salt and pepper, toss again, and roast for 40 minutes or until sweet potatoes are golden and you can easily pierce beets with fork.


  • 3 red beets
  • 3 yellow beets
  • 3 yams or sweet potatoes
  • 1 1/2 tablespoons extra virgin olive oil
  • salt and pepper to taste
