Banana Walnut Muffins

These tender muffins get plenty of sweetness and moistness from mashed bananas...and the sprinkling of sugar and coarse salt make a delicious and unusual topping.

Ingredients

SERVINGS: 12
Dry Ingredients
  • 1 1/2 cups flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 cup chopped toasted walnuts
Wet Ingredients
  • 1 egg
  • 3/4 cup brown sugar
  • 1 cup mashed banana
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
Topping
  • coarse salt and sugar for sprinkling

Preparation

  1. Preheat oven to 350F.
  2. Combine flours, baking powder, baking soda, salt, cinnamon and nutmeg. Stir well. Add walnuts.
  3. Combine egg, brown sugar, banana, oil and vanilla, stir well. Combine flour mixture with egg mixture and stir gently.
  4. With an ice cream scoop, divide mixture evenly between 12 greased muffin cups. Sprinkle with sugar and salt.
  5. Bake 15-20 minutes.
