On Thursday, August 30th, Chefs Kyle Patterson of Sinema and Trey Cioccia of Black Rabbit and The Farm House will join together to bring you a John Wayne-inspired feast straight out of the ol’ West. 

Inspired by their own restaurant’s ‘family meal,’ when restaurant staff have the chance to sit and dine as a team, the Chefs will prepare the food family style, allowing guests to break bread together. Guests will get a glimpse ‘backstage’ during this intimate dinner set at the long table in Sinema’s Backstage Private Event Space.

Cocktails begin at 6:30 p.m., followed by a seated dinner at 7:00 p.m. after an introduction with our special guests. A variety of cocktails and pairings will be created and paired with each course by Sinema's esteemed Beverage Director & Lead Bartenders.

Chef Kyle: Octopus LyonnaiseTruffled Yukon Crispies, Bacon Fat Confit Octopus, Baby Frisee, Radish, Shaved Zephyr Squash, Poached Quail Egg

2ND COURSE-Quail

Chef Bryan: Nduja Fried Quail

Chef Pablo: Fried Quail with Pingquant, Bourbon Soy Mash Grits, Garlic Spinach 

Chef Kyle: Quail L'range, Endive, Asparagus, Radish, Pistachio 

Paired with Dawn of the Dead Rabbits-RH Rye, Barrel Charred Pinot Noir, Angostura, Orange

3RD COURSE-Tres Leches

Chef Bryan: Rye Bourbon Tres Leche 

Chef Pablo: Tres Leche Bread Pudding, Pecan Cajeta Brittle Bourbon Glaze

Chef Kyle: Pedro Sherry Bourbon Tres Leche 

Paired with Double Barrel Milk Punch - RH Pedro Ximenez Finish Bourbon, Bourbon Barrel Vanilla, Cream, Nutmeg
