Ingredients
- 2 large apples, peeled and diced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1/4 cup granulated sugar
- 1 tablespoon all purpose flour
- 1/2 teaspoon ground cinnamon
- pinch salt
- dash lemon juice
- 1 1/2 cups all purpose flour
- 3/4 cup plus 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 10 tablespoons unsalted butter, softened
- 3 egg yolks, beaten
- 1-2 tablespoons cinnamon sugar
Preparation
For Apple Pie Filling:
1. Heat butter in medium pot over medium-low heat until melted. Add diced apples, turn up heat to medium. Cook for 6-8 minutes stirring occasionally until apples soften and release juice.
2. Add remaining ingredients to pot, stir to combine. Stir over medium heat until bubbling, then decrease heat to medium-low and cook until thick and syrupy, stirring constantly, about 4-6 minutes. Remove from heat and set aside.
For Crust/Crumble:
1. Sift together flour, sugar, and salt into large mixing bowl. Create well in center.
2. Add butter and egg yolks to well. Cut in butter until completely mixed with flour and large crumbles are formed. Press 2/3 mixture into a 9x9 inch pan, pressing into an even layer.
3. Top crust layer with the apple pie filling, then top with remaining crumbles in an even layer. Sprinkle with cinnamon sugar.
4. Bake at 350 degrees for 30-35 minutes until edges and crumbles turn golden. Allow to warm-room temperature before serving so that bars stay intact once cut.
