New Greenery Co. in Hillsboro Village

Sadly, Hillsboro road, running through the center of HIllsboro Village is a skeleton of what it used to be; a bustling bohemian strip full of local stores and restaurants. The past two years has been hard on the village, with the closing of Jacksons, Pangea, Davis Cookware and Provence Bakery and the collapse of the Ruby Sunshine build,  necessitating the temporary close of Fido’s too (owned by local Bob Bernstein of Bongo Java Roasting).  So you can imagine how excited we were to find  Greenery Co. a new local restaurant opened by sisters, Whitney Abblitt and Caroline Gaston, both Vanderbilt grads. When Caroline was living in New York she became addicted to a small chain called Sweetgreen, located in Whasington DC, California and Chicago also. When she moved back to Nashville she missed her healthy grab and go salads and bowls, and wanted to recreate that concept in Nashville. 

Greenery Co. occupies the former Provence Bakery, but you would never know it. With a new backdoor and front door entrance the space has been completely rethought. With its sleek yet warm white and green interior punctuated with green plants it’s fresh, beautiful and calming. While their system for to-go is super efficeint, relaxing in the beatuful booths is what we chose to do. The Chipotle Shrimp bowl was warm and flavorful with blackened shrimp, wild rice, and a honey chipotle vinaigrette. The Chimmi Churrasco bowl was equally as good. You can get a small or large bowl, and they’re assembled (and chopped) behind the counter while you wait. The cookies displayed at checkout were irresistable looking and tasting. So happy to see the locally owned restaurant in Hillsboro Village. Rock on sisters.
