Vegetable Chili

    Ingredients

    • 2 tablespoonsolive oil
    • 1 largeonion, chopped
    • 2red bell peppers, chopped
    • 2garlic cloves, minced
    • 2celery stalks, chopped
    • 1 1/2 tablespoonschili powder
    • 1 teaspooncumin
    • 1 teaspoonsalt
    • 2 cupschopped butternut squash or sweet potato
    • 2zucchini, chopped
    • 8 ouncesmushrooms, sliced
    • 1 (14-ounce) cansdiced stewed tomatoes
    • 3 cupswater
    • 1 (16-ounce)can white beans, drained
    • 2 tablespoonsfresh lime juice

    1. Heat oil in a large saucepan or Dutch oven. Add onions, celery, red bell pepper and garlic. Saute 10 minutes. Add chili pwder, cumin, salt and pepper. Saute 5 minutes. Add squash, zucchini, mushrooms, tomatoes and water. Bring to a boil. Rduce heat, cover and simmer for 15 minutes.
