Pumpkin Flax Bread

    Ingredients

    • 1 cup whole wheat flour
    • 1 cup all purpose flour
    • 1/2 cup honey
    • 1/4 cup ground flax
    • 3/4 teaspoon baking soda
    • 1 teaspoon pumpkin pie spice
    • 1 teaspoon cinnamon
    • 1 teaspoon ginger
    • 1/8 teaspoon cardamom
    • 1/4 teaspoon nutmeg
    • 1/4 cup butter, melted
    • 2 large eggs
    • 1 (15 ounce) can pumpkin
    • 1 (6 ounce) container plain greek yogurt

    Preparation

    1. Combine dry ingredients in large bowl; mix well. 
    2. Stir wet ingredients together in separate bowl, then pour into dry mixture and stir until combined. 
    3. Pour batter into two (lightly-sprayed) loaf pans.
    4. Bake at 350°F for 25-35 minutes or until wooden toothpick inserted in center comes out clean.
    5. Cool 10 minutes on wire rack; remove from pan.
    6. Cool completely on wire rack.
