Old Bay Spiced Hasselback Baby Yukon Gold Potatoes

    Ingredients

    • 12baby Yukon gold potatoes
    • 4tablespoons unsalted butter
    • 1tablespoon olive oil
    • 2teaspoons Old Bay seasoning
    • 1tablespoon minced chives

    1.  Heat oven to 425F. Rinse potatoes. Cut multiple thin slits in each potato without cutting all the way through; potatoes should remain whole at the bottom. Place potatoes slice side up in a baking dish. 

    2.  In small saucepan, heat butter until slightly browned. Remove from heat and add olive oil. Spoon mixture over potatoes generously. Dust potatoes with Old Bay. 

    3.  Bake 30 minutes or until crispy and golden. Sprinkle with chives before serving.
