Mongolian Beef

In any stir-fry where the cooking is quick and hot, have all your ingredients measured out first (also called mise en place).

    Ingredients

    • 1 pound flank steak, cut into 1 × 2-inch pieces
    • 1 tablespoon soy sauce
    • 1 egg white
    • 2 tablespoons canola or vegetable oil
    • 3 green onions
    • ⅓ cup chopped white onion
    • 2 tablespoons oyster sauce
    • 1½ tablespoons sugar
    • ½ teaspoon white pepper

    1. In a large bowl, whisk together the soy sauce and egg white. Add beef and mix well. Heat oil in a large skillet until very hot. Slice green onion in half lengthwise, and cut into 2-inch pieces. Add green onion and chopped white onion to skillet, and stir-fry 3 minutes.

    2. Add beef, reserving soy mixture, and stir-fry 4 minutes or until no longer red. Add oyster sauce, sugar, and white pepper to soy mixture, stir well and add to skillet. Stir-fry 2 minutes.
