Mom’s spaghetti and meatballs from Mickey Margulies.
Crush 4 cloves of garlic (or mince fine) and cook for a few minutes in a small amount of oil. Use large kettle.
In seperate pan brown meat: ground beef, meatballs, stewing veal and about 5 green peppers cut up, pork chops.
To lightly browned garlic in first kettle add: large can italian tomatoes, 2 can tomatoe sauce, can tomatoe paste, water out of can of tomatoe paste, 2 handfuls of grated Italian cheese, handful chopped parsley, 1 tsp salt, few dashes pepper, 1/2 tsp. oregano, 1 1/2 tsp. accent.
Then add meat and drippings and cook about 2 hours or so until meat is done and sauce is of desired thickness.
For meatballs add: I lb. ground beef, 1 clove of garlic minced, 2 Tbs. chopped parsley, 2 Tbs. grated cheese, 1 tsp. salt, dash of pepper, 1 tsp. accent, 1/2 cup bread crumbs, 1/4 cup milk, 1 egg.
