Farm Burger Summer Superfood Salad

    Ingredients

    • 2 cups each green and red cabbage, sliced
    • 2 cups lacinato kale, sliced thinly
    • 1 cup parsley leaves
    • Hemp Hearts
    • Fresh Mint, julienned, garnish
    • 2 cups canned black eyed peas
    • 1 teaspoon smoked paprika
    • 1 tablespoon chili powder
    • 1 teaspoon cayenne pepper
    • 2 tablespoons roasted garlic cloves
    • 6 tablespoons grainy mustard
    • 1 cups red wine vinegar
    • 3 tablespoons sorghum
    • 2 cups vegetable oil

    1. For Salad: In a large bowl, mix cabbages, kale, and parsley.

    2. For Fried Peas: Rinse peas, pat dry. Heat oil in a skillet to 350. Fry beans 4 minutes. Drain. Toss in paprika, chili powder and pepper.

    3. For Dressing: Add all ingredients to blender except oil, slowly add oil to emulsify.

    4. Combine greens, hem hearts, and peas. Toss with dressing. Garnish with mint.
