Easy Pasta with Greens, Beans and Sausage

There are about a bajillion ways to vary this dish. Here is our standard. 

    Ingredients

    • 1/2 poundground pork sausage (Wedge Oak Farm sausage is our favorite)
    • 2cloves garlic, chopped
    • 6 cupshot cooked penne pasta
    • 1-2 cupsgarbanzo beans or white beans, rinsed
    • 3 cupsfresh baby greens (arugula, baby turnip greens, Han Tsai Tai, spinach)
    • 2 ouncesParmesan cheese, grated

    1. Saute sausage with garlic until browned and done, about 7 minutes. Toss with hot cooked pasta, beans and baby greens. Sprinkle with Parmesan cheese. Serves 4.
