Chef Karla Ruiz's Goat & Chorizo Chili

Chef Karla Ruiz of Karla’s Catering turns up the heat with this chili!

    Ingredients

    • 2 tablespoonsoil
    • 1white onion, diced
    • 1 – 2poblano peppers
    • 1red bell pepper
    • 4guajillo peppers
    • 3cloves garlic
    • 1 poundground goat
    • 1/2 poundchorizo
    • salt
    • pepper
    • 1 1/2 tablespoonscumin
    • 1 tablespoonoregano
    • 10 – 12roasted tomatoes, blended
    • 3 cupswater
    • avocado, sour cream, and cheese

    1.  Heat oil in pot. Add onion, peppers, and garlic.

    2.  Add goat and chorizo and simmer 8 minutes.

    3.  Add spices, tomatoes, and water.

    4.  Reduce heat to low and simmer a few minutes.

    5.  Serve with garnishes.
